I love making this every year for St. Patrick’s Day. This sweet green dessert is light and airy, welcoming the beginning of the Spring season. Perfect to make in advance of family events or potlucks. Enjoy this fluffy taste of childhood!

Ingredients

Pineapple and Whipped Cream for Pistachio Pudding Fruit Salad

It’s so fun to quickly mix these easy-to-find ingredients into a stunning sweet dessert treat. For an optional pop of color, top with maraschino cherries. I found mine in the baking aisle grouped with all the ice cream toppings.

  • Pistachio Jello-O Brand Pudding Mix
  • Cool Whip Original Whipped Topping
  • Canned Pineapple Chunks
  • Mini Marshmallows

What is Watergate Salad?

Similar to Classic Ambrosia Fruit Salad, Watergate Salad calls for the use of pistachio pudding, giving its distinctive light green hue. Beyond the difference in Watergate salad’s color (due to pistachio pudding), the other general ingredients are interchangeably the same. The critical elements for both tend to be pineapple, mandarin oranges, and then optional toppings such as coconut flakes and pecans or walnuts.

Mixing Pistachio Pudding Salad Ingredients

Green Pistachio Color: As you can see, the pudding mix is a very pale shade of green. However, as soon as you mix it into the Cool Whip and Pineapple juices, the green color will begin to emerge. I left my dish as is, but if you want to amp up the saturation, add a couple of drops of food coloring.

Canned Pineapple Juice: As much as I love drinking the excess pineapple juice from a glass, we are going to include all of the juices directly into this dish. As you begin to fold it into your Cool Whip and pudding mix, it will seem really watery. Keep on mixing and you’ll see that once it is fully incorporated, it creates a creamy and fluffy consistency throughout.

Makes 10 Servings of Pistachio Fluff

After mixing in all of your ingredients, chill in your refrigerator for one or more hours.

Easily serve it up family-style in one large bowl. Or, when serving others, scoop it out into individual ramekins or ice cream dishes. I like to add a sprinkling of extra marshmallows and a pretty red maraschino cherry.

Pistachio Pudding Fruit Salad is an easy 4-ingredient sweet side dish, perfect for summertime potlucks.

Ingredients

  • 3.4 oz (96g) Pistachio Jello-O Brand Pudding Mix
  • 8 oz (226g) Cool Whip Original Whipped Topping
  • 20 oz (567g) Canned Pineapple Chunks
  • 5 oz (142g) Mini Marshmallows
  • 2 oz (57g) Maraschino Cherries (optional)

Instructions

  1. Slowly add pudding mix to whipped topping by hand until thoroughly dissolved.
  2. Fold in pineapple chunks, including all the juice from the can.
  3. Add marshmallows.
  4. Chill for an hour or more.
  5. Serve in a large bowl or scoop into individual dishes.

Notes

Garnish Ideas: Keep a few marshmallows aside. Doing so allows you to garnish the top of the bowl with sprinkled ingredients for a pretty presentation. It's also festive to top with maraschino cherries!
